One of our favorite breakfast for dinners is getting vegan tamales from Tucson Tamale company (or when we are lazy from the frozen section in the grocery store) whip up some scrambled eggs, throw in some salsa and black beans, add in the steamed tamale and chop it and mix it all up in the skillet, then top it off with some cheese!
